Remove the pastry sheets from the package, separate and place on a board to thaw. Chop the parsley and crumble the feta cheese in a baking bowl. Preheat the oven to 200 degrees.

Beat the egg and mix it in a baking bowl. Add the larger part of the egg to the sheep’s cheese and keep a small part for coating the finished dumplings. Mix the sheep cheese with the egg, parsley, paprika powder and a good pinch of bell pepper.

Roll out the pastry sheets widthwise so that they are approximately square. Place half of the cheese mixture in the center of each. Fold the dough across each other to make triangular pockets. Press the edges firmly and cut with a wire at the seams.

Use a brush to apply the remaining egg. Bake the pockets at 200 °C on the middle rack for 15 min. They should be golden brown and crispy.
