For the apricot cake, whisk egg yolks with water, powdered sugar and vanilla sugar until foamy.

Preheat the oven to 180°C.

Mix flour and baking powder and add. Beat egg whites until firm and fold in.

Spread the dough on a baking tray lined with baking paper. Divide the apricots and place on the sponge mixture with the curved side facing up. Bake the apricot cake in the preheated oven for approx. 25 to 30 minutes.
