A simple but delicious cake recipe:

Place the curd in a sieve for 2 to 3 hours to drain. Mix the butter and sugar until creamy. Gradually add the remaining ingredients. Pass the curd through the sieve and fold in.

Pour into a cake tin (28 cm ΓΈ) and bake for 40 minutes at medium heat.

Important: never use durum wheat semolina. The semolina should both give firmness and absorb a lot of moisture. Otherwise, there is a risk that the cake will remain “soggy” – which does not affect the good taste, but is not exactly “to offer”.
