For the salmon with lemon vegetables, wash the lemon hot, dry it and grate the peel. Make a marinade with the juice of one lemon half and 2 tablespoons of olive oil. Mix this with salt, pepper and fish seasoning.
Sprinkle the salmon fillets with some freshly squeezed lemon juice, salt lightly and sear on the skin side in a hot pan with some olive oil until crispy.
After 2-3 minutes (watch the degree of browning) reduce heat, put the lid on and continue cooking at a low temperature until the desired degree of doneness.
Sauté the pan-fried vegetables in a hot pan with olive oil as well. Once the vegetables are firm to the bite, mix with the marinade and serve immediately with the crispy fried salmon fillet.
Serve with croquettes. If desired, sprinkle the fish with lemon juice.
