Instructions:

For the Nicolo bread, mix all dry ingredients. Add water and oil. Knead until the dough comes away from the bowl.

Let rise for about 30 minutes. Pour the dough into a greased loaf pan sprinkled with flour. Let rise again for about 30 minutes.

Place in oven preheated to 220 degrees. Put a bowl with water in the oven. After 10 minutes, turn the heat down to 180 degrees. And bake for about one hour.

After the baking time, do the “knock test”. If the bread sounds hollow, it is baked through.
