For the Baumkuchen with Tonka Bean, preheat the oven to 150 degrees. Mix vanilla, butter, marzipan and tonka bean together well. Add the egg yolks little by little.
Then beat egg whites, sugar and a little salt until creamy. Combine the flour and cornstarch, then fold in the whipped cream and flour mixture alternately.
Finally, fold in the whipped cream and rum mixture.
Line the bottom of an ovenproof square pan or a square cake baking pan with baking paper.
Turn the oven on to broil mode. Spread a thin layer on the baking paper and bake it until golden brown. Repeat the whole process layer by layer until everything is used up.
