For pears au gratin, cut a lid off the pears. Using a baller, hollow out the fruit to a rim of about 5 mm.

Chop the flesh into cubes. Sprinkle these and the inside of the pears with juice of one lemon. Finely grate the cheese. Mix with cream cheese, cream and 30 gr. of chopped walnuts. Season the mixture with salt, bell pepper and paprika. Mix in the pear cubes. Fill the quantity into the pears. Sprinkle with the remaining nuts.

Place in a buttered baking dish. Bake the pears on the middle shelf in the oven preheated to 220 degrees Celsius for 15 min.

Remove the pears from the oven and sprinkle with pistachios.
