Season squab and brown in oil. Put half the amount of butter in a frying pan, sauté spices and onion until translucent, deglaze with port and red wine, reduce. Pour in the vegetable bouillon, add the soaked mushrooms and let everything rest for about 20 minutes. Thicken the sauce with cold butter if necessary. Remove the squab and offer.
