Instructions:

For the apple muffins, cream butter with honey until fluffy, beat in egg yolks one at a time until well incorporated. Grate 2 apples, squeeze the juice as well as possible and set aside.

Stir in the apples. Mix nuts with spices and a pinch of salt and stir in alternately with beaten egg whites.

Pour into 12 muffin cups, cut the 3rd apple into small cubes, spread over the muffins and sprinkle with cinnamon. Bake at 180 °C for approx. 30 minutes.
