For the hamburger buns, mix the flour with the dry ingredients in a bowl. Heat 160 ml of water in a saucepan and melt the butter in it.
Remove from the heat and add the milk. Allow to cool to lukewarm (about 50 degrees). Add to the flour and knead (preferably with a food processor).
Add the yolks little by little. Knead the dough for at least 10 minutes (even longer by hand) until it is completely smooth.
Then cover and let rise in a warm place for about 1 hour, knead and let rise again for a good 1 hour. Divide the dough into 12 pieces.
For burger buns, shape into flat loaves about 12 inches in diameter. For hot dog buns, shape into rolls about 12 cm long.
Place the buns on a baking tray covered with baking paper, dust with flour and let rise again, covered, until they have doubled in volume.
Then brush with milk and sprinkle with sesame seeds if desired. Bake in the preheated oven at 200 degrees top/bottom heat for about 12-14 minutes.
They are ready when they are golden brown. They are best baked in 12 cm ramekins. You can make them out of aluminum foil.
