For the vegetable strudel, make a smooth dough with flour, water, eggs, vinegar, salt and oil and let it rest for 1/2 hour.
Then divide the dough into 2 equal parts and roll each out thinly on a sheet of baking paper.
Dice all the ingredients for the filling, mix well and season to taste. Divide the filling into 2 parts and mix the diced ham to one part.
Spread the filling on the pastry sheets and fold them. Close the edges well. Brush each vegetable strudel with a little olive oil and bake in a preheated oven at 180 °C for 30 minutes.
Since the strudels tend to burst open, it is advisable to place them in oblong baking pans with the baking paper for baking.
