For the potato salad with carrots and tangerines, dice the gherkins, sausage and potatoes. Drain the tangerines and collect the juice, peel the shallots and cut into small cubes.
Mix yogurt mayonnaise, mustard and 4 tablespoons mandarin juice and add shallots, gherkins, sausage, carrots, potatoes and mandarins. Season to taste with salt and pepper.
Leave the salad in the refrigerator for at least 1 hour. Garnish the potato salad with carrots and tangerines with parsley just before serving.
