For the zucchini salad with Parmesan, wash the zucchinis, cut away the flower and stem ends and slice the fruit.
Slice the Parmesan into fine shavings with a cheese slicer.
Wash and halve the cocktail tomatoes (if they are larger, quarter them).
For the marinade, mix the ingredients well in a bowl and season to taste. If it is too solid, mix it with a little milk.
Mix the zucchini slices, tomatoes and chopped almonds in a bowl, pour the marinade over them.
Serve the zucchini salad sprinkled with the Parmesan shavings.
