For the wet potato salad, first heat salted water in a saucepan. Rinse the potatoes and cook them in the boiling water for about half an hour. Check with a fork to see if the potatoes are cooked through.

Drain the potatoes, let them cool a little and peel them. Cut or slice the lukewarm potatoes into evenly thin slices and place in a suitable bowl.

Remove the peel from the onion and chop finely. Rinse the parsley, shake dry and chop finely without the coarse stems. Add both to the potatoes. Heat the beef broth. Pour enough clear soup over the potatoes so that they are nice and wet and let everything simmer together with the lid closed for at least 1 hour.

Add the oil and vinegar to the potatoes and mix everything together. Season the wet potato salad with salt and pepper.
