For the pasta nest, clean the spring onion, wash and chop with the green. Peel the garlic clove and chop it as well.
Put breadcrumbs, minced meat, cheese, egg, onions and garlic in a suitable bowl and mix well. Season with salt, pepper and cayenne pepper.
Form balls and place them on an oiled baking tray or in a roaster. Place the balls in the oven at 200 degrees for about 20 minutes.
In the meantime, put the pasta in boiling water and cook until al dente. Then strain and set aside.
Wash and pat dry the leaf lettuce and place it on a plate so that it is covered. Peel the onion and use it to make eyebrows for the birds. Peel the carrot and cut a triangle out of it for the beaks.
When the meatballs are done, let cool briefly. Then surround with ribbon noodles, leaving 2/3 of the meatball free and making it look like a nest. Place on the lettuce leaves and use the onions to set the eyebrows. Make the eyes with 2 dabs of mayonnaise and 2 peppercorns each and place the beak underneath.
Finally, use a piece of curly parsley for the hair and serve the finished birds in the pasta nest.
