For the vegetable potatoes, peel and dice the potatoes, celeriac and carrots. Clean, wash and slice the leek.

Put the vegetables in a pot, pour in the beef broth and bring to a boil with the bay leaf. Cover and simmer for about 20 minutes. The potatoes should have almost absorbed the soup.

Serve your vegetable potatoes with a little butter and chopped parsley.
