Rinse tomatoes and remove stem base. Score crosswise and place in hot water until skin comes off. Cut in half and remove the seeds. Cut into finger-thick pieces. Finely dice the onions. Melt the butter in a large frying pan. Sauté the onions first, then add the diced tomatoes. Cook without a lid until the liquid has boiled down – but the tomatoes should not break down. Add herb salt and pepper to round off the fruity taste.
