For the Tofu Bleu put a weight on the tofu, already in the morning, so that the water goes out. Then slice the tofu and let it stand in soy sauce with a little lemon juice, salt and pepper until the marinade soaks into the tofu. Place a slice of cheese on both halves of the tofu. Fold up and perhaps secure these with toothpicks.
Beat eggs in a soup plate. Dredge tofu first in flour, pull through egg and roll in bread crumbs. Heat plenty of oil in a large frying pan. Put in the tofu bleu, fry until golden brown and drain on paper towels. Use lemon wedges to garnish the Tofu Bleu.
