For the Yorkshire pudding, sift the flour and salt together into a wide dish. With a wooden spoon, press a bulge in the center and pour in the eggs and a tiny bit of milk. From the center, mix the flour and liquid gently, then stir in the remaining milk. Put the lard in a roasting pan and put it in the oven heated to 200 degrees.
Prick the sausages a few times, put them into the hot fat and roast them in the oven for about 25 minutes until they are lightly browned. Then pour the dough over the sausages and put the whole thing in the oven for 30-40 minutes.
The pudding dough should be juicy and fluffy and form quite a crispy casing.
