Cheese sauce:



Make spaghetti in salted water.

Carbonara sauce:

Cut the onions into large cubes and sauté them in olive oil with the garlic and the bacon bits. I let this mixture reduce very much (onion volume to 1/4). Please make sure that the onions do not turn black, if they get too dark extinguish with a little bit of wine.

Finally, mix well the drained spaghetti with the two sauces.


Our tip: use bacon with a fine smoky touch!
