For the spelt and curd golache, mix all the ingredients for the dough, adding the flour at the end. Leave to rest for a while. In the meantime, prepare the filling. Cream the butter, and gradually add the other ingredients, finally adding the raisins.

Roll out the dough thinly and cut out squares (11×11). Place 1 tablespoon of filling on top, folding dough corners in toward center. Brush with egg.

Cut out any cookies from dough scraps and place in the center of the golaches, brush with egg. Bake in preheated oven at 180° for about 25 minutes until golden brown.

Sprinkle with sugar.
