For the raspberry jam with spirit, sort and clean the raspberries well. If possible, please do not wash them.

Mix the fruit in a large pot with the jam sugar and leave to infuse for about 1 hour.

Remove the zest from the lemon and squeeze out the juice.

Add both to the fruit.

Then bring the mixture to a boil and boil for 4 minutes until bubbling.

Add the raspberry brandy and bring to the boil again.

Immediately fill the hot raspberry jam with spirit into clean jars and seal well.
