For the apple pie, cream the room-warm butter with sugar, vanilla sugar, salt and grated lemon zest. Gradually add the eggs. Sift the flour and slowly add the baking powder (mix in loosely). Line a baking tray with baking parchment paper, spread the mixture about 2 cm thick and, if desired, cover with fruit so that the skin or peel is facing downwards. Bake at 160 °C in the preheated oven for approx. 35-40 minutes. While still warm, glaze the apple cake with hot apricot jam and sprinkle with powdered sugar.
