For the saddle of hare, remove the skin from the saddle of hare that has been laid down or pickled, lard with bacon and season with salt and pepper.
Roast leaf-cut root vegetables and onion in a pan and add the spices and bread crust. Now put the meat in and let it stew until soft. Then remove the meat and keep it warm.
Dust the root vegetables with flour, pour on and strain. Season the sauce with cream, red wine, cranberries, lemon zest and lemon juice, bring to the boil and season if necessary.
Pour the sauce over the saddle of hare and serve hot.
