Instructions:

Wash and pat dry the meat for the natural cutlets and season vigorously with basil, thyme, oregano, salt, pepper and nutmeg on both sides.

Finely dice the two onions and sauté in oil, also add a piece of smoked pork belly.now sear the cutlets vigorously from both sides.

Meanwhile, cut the mozzarella into slices. Cover the fried meat with it and finally put the ham on top.

Reduce the heat and let it cook covered for about 10 minutes.

Then pour some water and add a soup cube and some tomato paste. Add a little grappa or cognac and let the sauce thicken slightly.

Finally, refine with a little whipped cream.
