Instructions:

Clean pea pods and green onions and cut into bite-sized pieces. Heat the butter and sauté the green onions together with the pea pods. Season with salt and pepper. Add honey and balsamic vinegar and let stand for 1 minute. Meanwhile, for the polenta, boil about 250 ml of water with salt. Then add butter and cornmeal and let swell for a few minutes, stirring constantly. For the mustard sabayon, mix all the ingredients together and whisk in a bowl over hot steam until fluffy. Spread the finished polenta generously on hot plates and arrange the vegetables on top. Sprinkle the sesame seeds on top and serve with the mustard sabayon.
