For the young pork roast with rind, first wash the meat, pat dry and cut the rind in a diamond shape.
Peel the garlic, cut it into fine cubes and put them on a board with the salt and caraway seeds, cut them into small pieces with a cradle knife and mix them well. Rub the meat all over with this mixture.
Put it in a roasting dish and pour some soup over it. Put it in the oven and let it roast at low temperature for 60 minutes. Then finish roasting the young pork with rind for about 20 minutes at 190 °C.
