Rinse radicchio whole and cut into small pieces. Peel and chop eggs. Knead Gorgonzola with sour cream or crème fraiche, mix with salt, pepper and sparkling wine until smooth, maybe add caper broth. Spread quantity on patties, sprinkle with capers and egg, top with radicchio and roll tightly in greaseproof paper.
Tip. Instead of capers, chopped black olives are just as suitable.
