Pasta dishes are always a good idea!

Mix salt, flour, eggs and water to a smooth dough. Let dough rest for approx. 15 min. to allow flour to swell. Press the dough through a spaetzle press into boiling salted water. Draw in it until they float on the surface. Remove with a skimmer and place in a colander to drain.

Finely grate the cheese. Alternate sparrows and cheese in a greased ovenproof dish. Finish with the cheese, season with pepper and pour the whipped cream over the top.

Bake in the oven at 200 degrees for about 15 to 25 minutes (until the cheese has melted). Transfer to warmed plates and sprinkle with fried onions. Possibly

Appenzeller and Gruyère, but it works just as well with Gouda or Emmental.
