Cook the quinoa in salted water until soft.

Peel and finely chop the onion and garlic and sauté in olive oil. Remove the stalk, stem and seeds from the peppers and tomatoes and cut into small cubes. Fry the vegetables as well.

Add cooked beans, corn and quinoa and fry everything some more.

Season the quinoa with a chopped chili and salt and serve.
