1. peel pears, quarter, core, cut into wedges, sprinkle with a little juice of one lemon.
2. lightly caramelize sugar. Add butter and cinnamon powder, extinguish with wine and add 1 tbsp juice of one lemon. Place pears in the broth and simmer, covered, until soft.
Coarsely chop the cooking chocolate and add to the pear compote together with the walnuts. Stir in whipped cream.
4. serve compote together with vanilla ice cream.
