Instructions:

Season the partridges with salt, pepper and thyme and wrap them in bacon. Brown well on all sides and roast in the oven at 160 °C for about 15-20 minutes. Meanwhile, baste repeatedly. Remove and let rest while still warm.

Fry the streaky bacon in the roast residue. Add pimento seeds, bay leaf and a few carrot cubes, fry and add game stock. Let it boil down to approx. 125 ml. Strain and pour in cream. Stir flour with sour cream until smooth, mix in and finally season the sauce with pepper.
