Stir 10 egg yolks with 200 g sugar for 1/2 hour, add the juice of 2 lemons and 2 oranges through a sieve, as well as the grated peel.

Dissolve 40 g white gelatine in warm water and pour through a sieve.

Beat the egg whites until stiff and gently stir in. Allow the pudding to set.
