Instructions:

For the mushroom salad, mix the oil, vinegar, salt and pepper in a salad bowl.

Clean and dice the peppers. Finely slice or shave the mushrooms and add to the bowl along with the scallions, bell bell pepper and parsley.

Mix well and let the mushroom salad stand for about 15 minutes.
