For the cream of chive soup, cut the chives into fine rolls. Peel and chop the onion. Heat the butter in a pan and fry the onion in it.

As soon as the onion has taken on some color, deglaze with soup and add about three quarters of the chives. Peel the potatoes, cut into cubes, add and simmer until the potatoes are cooked.

Add the rest of the chives, stir in the cream, puree the soup with a hand blender and season to taste with salt and pepper. Meanwhile, cut the bread into fine strips.

Peel and press the garlic and mix it with olive oil and a little salt in a bowl. Drizzle the bread strips with it and then fry them in a non-stick pan until crispy.

Arrange the soup in plates or bowls, garnish with a few stalks of chives if desired and serve with the bread strips.
