Millet hot and cooled rinse, bring to a boil with milk and salt and swell for 20 minutes at low temperature, cool over. In the meantime, remove peel from apples, cut into quarters, slice and marinate with honey. Cream butter, add yolks, season with lemon zest and fold into millet mixture. Whip the egg whites with the sugar until stiff and finally fold into the millet mixture. Grease the gratin dish, pour in half of the millet mixture, spread the apples evenly on top and cover with the remaining millet mixture. Add butter flakes and bake at 200 degrees for 60 minutes.
