For the banana cake, separate the eggs and beat the egg whites until stiff. Cream the yolks, sugar and vanilla sugar, then stir in the whipped cream, chocolate shavings, coconut flakes and rum.

Mash the bananas well with a fork and stir in as well. Mix flour with baking powder and fold into the mixture alternately with the snow.

Bake at 180 degrees convection oven for about 45 minutes (test with a stick). Let the cake cool, remove from the pan and cover with chocolate icing.
