Lentils with Potatoes Au Gratin

Instructions:

1. for the coating make potatoes in a saucepan with boiling hot water 10- 15 min. until cooked. Drain well, add butter and milk and mash thoroughly. Mix in pecans and chopped thyme and set aside.

2. cook lentils in boiling hot water for 20 to half an hour until tender. Remove and set aside.

3. melt butter in a pan. Add garlic, leeks, celery and broccoli. Sauté over medium heat, stirring frequently, for 5 min until tender. Add the tofu cubes. Stir in lentils along with paradeis pulp. Season well with salt and freshly ground pepper, then pour the mixture into the bottom of a shallow ovenproof dish.

4 Place the mashed potatoes on top of the lentil mixture, covering it completely.

5. bake in the heated oven at 200 °C /gas mark 6 for 30 to 35 minutes until the coating is golden brown. Garnish with fresh thyme sprigs and serve on the spot.
