For the stewed spring onions, wash the onions well and cut off the wilted part. Melt the butter in a large pan, fry the spring onions in it all around, sprinkle with sugar and pour in the red wine. Allow to boil down until the liquid has reduced somewhat. Garnish the stewed spring onions with coarse salt.
