Kiwi Compote with Semolina Flummery

Instructions:

Bring milk with salt and 7 tbsp. sugar to a boil on highest setting. Sprinkle in the semolina and swell while stirring for 5 min. on 0. Stir in an eighth of a liter of orange juice at the beginning, then egg yolk and stiffly beaten egg white.

Pour into a cooled rinsed mold (1 1/2 liters capacity) and put to cool for at least 2 hours.

Peel kiwis, cut kiwis into wedges. Rinse, clean and quarter strawberries. Bring 3/8 liter orange juice with 3 tbsp sugar to a boil. Mix cornstarch with a little water and thicken the juice with it. Add the fruit, bring to the boil and leave to cool.

Turn the Flammeri out onto a plate and serve with the compote.
