For jambalaya, first cook the rice in salted water. Cut chicken into small pieces or strips. Cut leek and sausage into slices. Slice the carrots (thin slices).
Fry chicken in a little canola oil, add some pepper. When the meat is cooked through, add leek and sausage and fry until everything has some color.
In the meantime, fry carrots with some canola oil, add some water and simmer lightly. After some time, add the frozen peas and continue to simmer until everything is cooked through.
Add to the chicken (doesn’t matter if there is still some water in the vegetable mixture). Then add the cooked rice and finally curry and saffron. Jambalaya possibly still season with salt.
