Peel the untreated lemons very thinly, scraping away the white. Cut peeled and unpeeled lemons in half and wring out. Measure the juice.

Combine juice of one lemon, white wine, finely chopped lemon peel and jelling sugar in saucepan and bubble for 5 minutes. Make jelly test and fill hot into jars.
