~ Tamarind gives the dish a slightly sour taste. It is available in Asian stores as a paste or pressed packet.

Rinse and dry the fish and cut into pieces that are not too small. Remove the peel from the onions and garlic and chop finely.

Melt the tamarind paste in warm water. Add curry, salt and turmeric and mix well. Put the fish in and marinate for about 15 minutes.

Heat the oil in a frying pan and roast the fenugreek seeds briefly. Stir in the onions and garlic and roast over medium heat until the onions are golden brown.

Add the fish with the marinade and let sit, uncovered, at a low temperature for 15 minutes. Just before serving, sprinkle with curry leaves to taste.

Serve with basmati rice.
