For the fennel ice cream, first grind the fennel seeds and slit the vanilla pod. Pour boiling milk and whipped cream over both and let steep for 10 minutes. Strain through a hair sieve, remove fennel seeds.

Scrape out vanilla pulp and add to milk. Beat the egg yolks with dextrose, honey and salt over a bain-marie until foamy. Stir in fennel-vanilla milk. Allow to cool to about 10 degrees. Add lemon juice, stir thoroughly. Preparation time for fennel ice cream in the ice cream maker about 45 minutes.
