A bean recipe for every taste:
Heat the oil in a saucepan and sauté the onions until soft, then add the potato cubes and the vegetable soup and season with salt, thyme and a little rosemary and gently simmer for 15 minutes. Then add the peppers, carrots and tomato juice and cook for another 8 minutes. Heat the bean pods only briefly.
If necessary, season with a little salt and pepper.
Serve the stew in plates, sprinkled with grated feta and parsley.
