Cut the tomatoes into quarters, remove the core and place them on a baking tray with the skin facing up. Sprinkle with fresh thyme, rosemary and garlic, pour olive oil. Season with coriander, coarse salt and a pinch of sugar. Dry at 90 °C for 90 min in the upper part of the oven, set to “broil”. After cooling, you can put the dried tomatoes (adding the ingredients used) in olive oil.
