For the curd spinach croissants, finely chop the onion and garlic. Cut the cleaned spinach into small pieces. Sauté onion, garlic, pine nuts together in a pan with oil, add spinach, curd cheese and spices and sauté briefly. Then set aside and let cool.

Roll up the puff pastry, cut into 12 triangles and divide the spinach-curd filling among the puff pastry triangles. Roll up from the wide side of the triangle to the point and bend. Then brush with yolk-milk mixture and bake on a baking tray covered with baking paper in a preheated oven at 170° C for about 20 minutes.
