Instructions:

Peel and chop the onion and fry in hot butter.

Make a roux with flour. Deglaze with the soup, stir through and bring to the boil.

Add the herbs and season with salt and pepper.

Mix the egg yolk with the milk and add to the soup. Do not let it boil any more.

Arrange the herb soup and serve.
