As a main meal plenty for 4, with 4 more dishes for 8 people. Cut the piece of meat into 4 strips. Do not cut off the fat, it will be crispy during roasting and tastes delicious.

Cut the strips 3-4 times in a zigzag pattern, but only score them three-quarters deep so that the strips stay in one piece. This helps the marinade penetrate better and gives the pieces that typical char siu appearance.
