Clean cauliflower. Put in salted water for 30 min. to get out any bugs. In fresh salted water, to which juice of a lemon was added in 15 min. to make firm to the bite. Drain. Place in a greased baking dish.

For the sauce, boil the milk with salt and nutmeg. Thicken with maizena (cornstarch) mixed in cold water. Remove from heat. Stir egg yolks with a little bit of sauce. Again add to the sauce form. Season to taste. Stir in grated cheese. Pour the sauce over the cauliflower. Bake in the heated oven for 10 min.
